Can some one tell me guns these are?  They look like german 88's.

No, these are american M1 90mm guns. Similar to the german 88 and also an AA gun. If you ever asked what´s the gun in the M36 Jackson, here you found it.

I´m more concerned about the German soldiers at 21:12 wearing a cap under their helmet. Somebody here told me a long while ago that German helmets weren´t designed to carry a cap under them/ this wasn´t done.

I think they are 88s. If you check out this video of the British AA gun you can see the firing and loading mechanism is totally different.
