If you have BF2, you should just download FH2 and see for yourself if it suits your taste  :)
I don't think it really is possible to describe how FH2 feels and plays since it can be so different depending on the player and on what role you choose to take in the game.

Rifle sway goes in a /\ form. When its at the top, where you aim is where you hit (also take into account ping delay, bullet speed and bullet drop).
Why was this implemented if the bullet doesnt go where the rifle is pointing? And how is the average player supposed to know this?

Because it was the best way to take a step back from the insanely accurate FH1 rifles that were too easy to master. It was usually no match to hit an enemy on the horizon that was just a pixel or two in size. You could almost count on a certain death when running out in the open field, or when peeking out of a crater.
In FH2 it's a lot better now. You actually have a slight chance of surviving when running out in the open.
And the average player isn't always supposed to know everything about everything.
A master of the rifle would know that, ping, bullet drop and bullet speed must be taken into account when aiming. The average player will have to settle with knowing that were you aim, is where you will - more or less - hit.
There has to be some depth to discover, the rifle is after all the most common weapon in FH2.

Does the "instant-accuracy-trick" from FH1 work in FH2, too?

No, there is a delay before you can fire, after having changed your weapon.
This delay can be different on a weapon-to-weapon basis. So some weapons have a longer delay than others.
In this case, AT weapons have a much larger delay than rifles or SMGs.

Only problem I really see is that flags turn over very quickly, cap-times are much too short.
